  • 10 egg roll wrappers
  • 2 tsp cumin
  • 1 tsp chili powder
  • Vegetable oil (for frying)

Instructions

  1. Cook the chicken in a skillet over medium heat until fully cooked (about 10 minutes). Shred the chicken once cooled.
  2. In a bowl, combine shredded chicken, black beans, corn, spinach, cheese, cumin, and chili powder. Mix thoroughly.
  3. Place about 2 tablespoons of filling in the center of each egg roll wrapper. Fold and roll tightly.
  4. Heat vegetable oil in a deep pan until shimmering. Fry the eggrolls in batches for 3-4 minutes on each side or until golden brown.
  5. Drain on paper towels and serve warm with your favorite dipping sauces.
