Instructions

  1. If using fresh salmon, cook until flaky and let cool before flaking into a bowl.
  2. In a mixing bowl, combine flaked salmon, panko breadcrumbs, green onions, eggs, lemon juice, garlic powder, salt, and pepper. Mix until just combined.
  3. Shape the mixture into patties about 1 inch thick.
  4. Heat oil in a skillet over medium heat until shimmering (about 350°F).
  5. Fry croquettes for 4-5 minutes on each side until golden brown and crispy.
  6. Transfer to a paper towel-lined plate to drain excess oil and serve warm.
