  • 4 medium Russet potatoes
  • 2 tbsp olive oil
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup cooked crumbled bacon
  • 1/2 cup sour cream
  • 2 tbsp fresh chives, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Scrub the russet potatoes and pat them dry.
  2. Poke holes in each potato with a fork. Bake directly on the oven rack for 45-60 minutes until tender.
  3. Once cool, cut each potato in half lengthwise and scoop out some flesh, leaving about 1/4 inch around the edges.
  4. Brush both sides of each potato half with olive oil and season with salt and pepper.
  5. Bake cut-side down on a baking sheet for another 10-15 minutes until golden brown and crispy.
  6. Flip the potato halves, sprinkle with cheese and bacon, then return to the oven until cheese melts.
  7. Top each skin with sour cream and fresh chives before serving.
