Ingredients

Scale
  • 2 cups cake flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter (room temperature)
  • 3 large eggs
  • 1 tsp pure vanilla extract
  • 1 cup whole milk
  • 1 cup heavy cream
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans and line with parchment paper.
  2. In a large bowl, whisk together the cake flour, sugar, baking powder, and salt.
  3. In another bowl, beat the room-temperature butter until creamy. Gradually add granulated sugar and beat until light and fluffy (3-4 minutes).
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. Alternate adding the dry mixture with milk into the butter mixture until just combined—do not overmix.
  6. Divide batter evenly between pans and bake for 25-30 minutes or until a toothpick comes out clean.
  7. While cakes cool, whip heavy cream with powdered sugar until soft peaks form; use as filling between layers when completely cooled.
