  • 1 tbsp toasted sesame oil
  • 2 large eggs, lightly beaten

Instructions

  1. Preheat the air fryer to 370°F (190°C) for about 5 minutes.
  2. If using freshly cooked rice, let it cool completely to prevent clumping.
  3. Chop vegetables into small pieces for even cooking.
  4. Sauté garlic in a skillet over medium heat until fragrant (about 1 minute). Add chopped vegetables and sauté until slightly softened.
  5. In a bowl, whisk the eggs until frothy, then add to the skillet and scramble until cooked.
  6. Mix in cooled rice along with soy sauce and sesame oil; stir gently to combine.
  7. Transfer the mixture to the air fryer basket and cook at 370°F (190°C) for 10-12 minutes, shaking halfway through.
