  • 4 cups mixed greens (arugula, spinach, kale)
  • 1 cup cherry tomatoes
  • 1 ripe avocado
  • 1 cup cooked quinoa or farro
  • 2 tbsp extra virgin olive oil
  • ¼ cup fresh basil or mint, chopped
  • 2 tbsp balsamic glaze

Instructions

  1. Cook quinoa or farro according to package instructions; rinse under cold water once cooked.
  2. Preheat oven to 400°F (200°C). Toss cherry tomatoes with olive oil, salt, and pepper; roast for 15-20 minutes until blistered.
  3. In a large bowl, combine mixed greens with chopped herbs; drizzle with olive oil and season lightly with salt. Toss gently.
  4. Add cooled quinoa or farro to the greens; stir until well combined.
  5. Spoon salad mixture into bowls; tear open burrata cheese and place in the center of each bowl.
  6. Drizzle balsamic glaze over each bowl and garnish with extra herbs if desired.
