  • 2 large yellow onions (sliced)
  • 1 sheet puff pastry (thawed)

  • 4 oz goat cheese (crumbled)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet, heat 1 tbsp olive oil over medium heat. Add sliced onions and sauté until golden brown and caramelized, approximately 15-20 minutes.
  3. In another skillet, add remaining olive oil and sauté cubed butternut squash for about 10-15 minutes until tender.
  4. In a bowl, combine caramelized onions, cooked squash, thyme, salt, and pepper gently.
  5. Roll out the puff pastry on a lined baking sheet. Spread the filling evenly on the pastry, leaving a small border. Crumble goat cheese on top.
  6. Bake for 25-30 minutes until golden brown.
