  • 1 lb lean ground beef
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 8 oz cream cheese, softened
  • 2 cups shredded sharp cheddar cheese
  • ½ cup bacon bits (cooked)
  • Optional: ¼ cup diced dill pickles
  • Seasonings: 1 tsp dried oregano, 1 tsp paprika, salt and pepper to taste

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  2. Add onions, garlic, carrots, and celery to the pot. Sauté until softened (about 5 minutes).
  3. Pour in chicken broth and season with oregano and paprika. Simmer while scraping up browned bits.
  4. Lower heat; stir in heavy cream and cream cheese until smooth.
  5. Gradually fold in shredded cheddar cheese until melted.
  6. Taste for seasoning; garnish with bacon bits and optional pickles before serving hot.
