  • ½ cup sour cream
  • 1 tbsp lemon juice

Instructions

  1. Prepare the Marinade: In a bowl, mix parsley, oregano, garlic, red wine vinegar, salt, pepper, and olive oil until combined.
  2. Marinate the Chicken: Place chicken in a resealable bag or bowl. Pour half the marinade over the chicken, seal or cover, and refrigerate for at least 30 minutes.
  3. Preheat Grill: Heat grill to medium-high (375°F/190°C).
  4. Grill Chicken: Remove chicken from marinade and discard remaining marinade. Grill each side for about 6-7 minutes until internal temperature reaches 165°F (75°C).
  5. Make Garlic Sauce: In a small bowl, combine sour cream, minced garlic, and lemon juice. Mix until smooth; season with salt.
  6. Assemble Bowl: Slice grilled chicken and serve over rice or quinoa topped with extra chimichurri and a generous dollop of garlic sauce.
