  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 tbsp olive oil
  • 2 cloves fresh garlic, minced
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 1 medium onion, chopped
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 sheet puff pastry (thawed)
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Dice chicken and chop vegetables.
  2. In a large skillet over medium heat, add olive oil. Sauté onions and garlic until translucent (3-4 minutes).
  3. Add chicken, season with salt, pepper, thyme, and parsley; cook until lightly browned (5-6 minutes).
  4. Stir in chicken broth and heavy cream; simmer for about 5 minutes until slightly thickened.
  5. Mix in carrots and frozen peas; combine well.
  6. Roll out puff pastry and fit it over your baking dish filled with the chicken mixture. Seal edges.
  7. Bake for 25-30 minutes until golden brown.
