  • 2 (6 oz) fresh salmon fillets
  • 1 cup fresh cilantro, chopped
  • 2 tbsp freshly squeezed lime juice
  • 4 cups mixed greens (arugula, spinach, etc.)
  • 1 cup cherry tomatoes, halved
  • ¼ red onion, thinly sliced
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together lime juice, chopped cilantro, olive oil, salt, and pepper to create the marinade.
  2. Place salmon fillets in a shallow dish and pour half of the marinade over them. Marinate for at least 30 minutes in the refrigerator.
  3. Preheat your grill to medium-high heat (375°F/190°C).
  4. Grill salmon skin-side down for 6-8 minutes per side until it flakes easily with a fork.
  5. While grilling the salmon, combine mixed greens, cherry tomatoes, and red onion in a large bowl. Drizzle with remaining marinade and toss gently.
  6. Once cooked, let the salmon rest for a couple of minutes before flaking it on top of the salad.
