  • 1 lb large shrimp, peeled and deveined
  • 8 tostada shells
  • 2 ripe avocados
  • 1 cup fresh tomatoes, diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp freshly squeezed lime juice
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. In a bowl, whisk olive oil, garlic powder, chili powder, salt, and pepper. Toss shrimp in marinade and let sit for 15 minutes.
  2. Preheat grill over medium-high heat. Grill shrimp for 2-3 minutes on each side until pink and slightly charred.
  3. Mash avocados in a bowl with lime juice and salt to make guacamole.
  4. In another bowl, combine diced tomatoes, cilantro, lime juice, salt, and pepper for pico de gallo.
  5. Assemble tostadas by spreading guacamole on each shell, topping with grilled shrimp and pico de gallo.
