  • 1 lb lean ground beef
  • 1 cup cooked brown rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 2 cups shredded lettuce
  • 1 cup shredded cheddar cheese
  • 1/2 cup dill pickles, sliced
  • 2 tbsp ketchup
  • 2 tbsp mustard
  • 1 tsp onion powder
  • 1 tsp garlic powder

Instructions

  1. Cook the brown rice or quinoa according to package instructions (15–20 minutes). Set aside.
  2. In a skillet over medium heat, brown the ground beef for about 7–10 minutes until fully cooked. Drain excess fat.
  3. Add onion powder and garlic powder to the beef, stirring well until fragrant.
  4. While the beef cooks, prepare cherry tomatoes and shred lettuce.
  5. Assemble bowls by starting with a base of grains, then layering on seasoned beef, lettuce, tomatoes, cheese, pickles, ketchup, and mustard.
  6. Serve immediately and enjoy!
