  • 2 tbsp lime juice
  • Salt and pepper to taste

Instructions

  1. Season the pork shoulder with salt and pepper. In a large pot, heat oil over medium heat and sauté chopped onions until translucent.
  2. Add tomatillos and green chiles; cook until softened, about 5-7 minutes.
  3. Pour in enough water or broth to cover the ingredients by an inch. Bring to a boil, then reduce heat and simmer for 1.5 hours until the pork is tender.
  4. Stir in chopped cilantro and lime juice. Simmer for an additional 10 minutes.
