  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 2 cups fresh broccoli florets
  • 4 garlic cloves, minced
  • 1/4 cup low-sodium soy sauce
  • 1/2 cup low-sodium chicken broth
  • 1 tsp sesame oil
  • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. Chop the broccoli into bite-sized pieces and mince the garlic.
  2. Place the chicken breasts in the bottom of the slow cooker.
  3. In a bowl, whisk together soy sauce, chicken broth, minced garlic, and sesame oil; pour over the chicken.
  4. Cook on low for 4 hours or high for 2 hours.
  5. Add broccoli during the last 30 minutes of cooking.
  6. Once done, remove chicken to shred; mix cornstarch slurry into the sauce until thickened.
