  • 2 cups fresh spinach, wilted
  • 1 cup ricotta cheese
  • ½ cup freshly grated Parmesan cheese

  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Cut pockets into each chicken breast.
  2. In a bowl, mix spinach, ricotta, half the Parmesan, garlic, Italian seasoning, salt, and pepper until combined.
  3. Stuff each chicken pocket with the filling and secure with toothpicks if necessary.

  5. Transfer the skillet to the oven and bake for 20-25 minutes or until the internal temperature reaches 165°F (75°C).
