Instructions

  1. Bring the ribeye steak to room temperature for about 30 minutes. Season generously with salt and pepper.
  2. Preheat the oven to 425°F (220°C). Cut sweet potatoes into wedges, toss with 2 tablespoons olive oil, salt, and pepper, then spread on a baking sheet.
  3. Sear the steak in a hot skillet with 2 tablespoons olive oil for 4-5 minutes without moving until browned. Flip and cook for another 3-4 minutes until desired doneness.
  4. In a food processor, blend parsley, capers, garlic, remaining olive oil, lemon juice, salt, and pepper until smooth yet slightly chunky.
  5. Allow the steak to rest for 5-10 minutes before serving it alongside roasted sweet potatoes drizzled with green sauce.
