  • 1 lb ground turkey
  • 8 corn or flour tortillas
  • 2 cups enchilada sauce
  • 1 cup shredded Monterey Jack cheese
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Fresh cilantro (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Sauté diced onion and bell pepper in a skillet over medium heat until soft, about 5 minutes. Add ground turkey and cook until browned.
  3. Stir in cumin, chili powder, and half of the enchilada sauce; mix well.
  4. Spoon turkey mixture into each tortilla, roll tightly, and place seam-side down in a baking dish.
  5. Pour remaining enchilada sauce over the rolled tortillas and top with shredded cheese.
  6. Bake for 20-25 minutes until the cheese is bubbly and golden brown.
