  • 1 medium spaghetti squash
  • 1 lb lean ground turkey
  • 1 can (15 oz) diced tomatoes
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tsp Italian seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Halve the spaghetti squash lengthwise and remove the seeds. Drizzle olive oil on each half and season with salt and pepper.
  2. Place the squash cut-side down on a lined baking sheet and bake for 40-45 minutes until fork-tender.
  3. While the squash bakes, heat olive oil in a skillet over medium heat. Sauté the diced onion until translucent, then add minced garlic and cook for another minute.
  4. Add ground turkey to the skillet, cooking until browned. Stir in diced tomatoes and Italian seasoning; simmer for about 10 minutes.
  5. Once cooked, scrape out the spaghetti-like strands from the squash using a fork and combine with the turkey marinara sauce in the skillet.
  6. Serve warm, garnished with fresh basil or cheese if desired.
