  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 4 cups low-sodium chicken broth
  • 2 tsp cumin
  • 2 tbsp chili powder
  • 1 bell pepper, diced (red or green)
  • Sour cream or Greek yogurt for serving
  • Fresh cilantro (optional)

Instructions

  1. Prepare your ingredients by dicing the onion and bell pepper.
  2. In a large pot over medium heat, add olive oil and sauté the onion until translucent. Add garlic and bell pepper.
  3. Add chicken breasts to the pot and sear for about 5 minutes on each side until golden brown.
  4. Sprinkle cumin and chili powder over the mixture; stir well. Pour in the chicken broth followed by the white beans.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes.
  6. Remove chicken breasts, shred them with two forks, then return them to the pot.
