  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 1 ripe avocado, diced
  • 4 cups mixed greens (arugula and spinach)
  • 1 cup cucumber, diced
  • 2 green onions, sliced
  • ½ cup fresh basil leaves
  • ½ cup fresh parsley leaves
  • Juice of 1 lemon (about 2 tbsp)
  • ¾ cup plain Greek yogurt
  • 1 tbsp Dijon mustard
  • ¼ cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the grill or skillet over medium heat. Season chicken breasts with salt and pepper. Grill for about 6-7 minutes per side or until the internal temperature reaches 165°F (75°C). Let rest for 5 minutes before slicing.
  2. While the chicken rests, chop cucumber and green onions; prepare mixed greens.
  3. In a blender, combine Greek yogurt, basil, parsley, lemon juice, Dijon mustard, olive oil, salt, and pepper. Blend until smooth.
  4. In a large bowl, mix the sliced chicken with chopped veggies and mixed greens. Drizzle with Green Goddess dressing and toss gently.
  5. Allow salad to sit for about 10 minutes before serving at room temperature or chilled.
