  • 4 boneless, skinless chicken breasts (approx. 1.5 lbs)
  • 2 fresh limes (juiced)
  • 1/4 cup pure honey
  • 2 ripe avocados
  • 1/4 cup chopped fresh cilantro
  • 1 tsp garlic powder
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix lime juice, honey, olive oil, garlic powder, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
  2. Preheat your grill to medium-high heat. Grill marinated chicken for about 6-7 minutes per side until internal temperature reaches 165°F (75°C).
  3. While the chicken cools, halve and mash avocados in a bowl. Mix in chopped cilantro and a squeeze of lime juice.
  4. Slice grilled chicken into strips. On a serving platter, layer chicken pieces topped with avocado mixture.
  5. Drizzle any remaining honey-lime sauce over the stack and garnish with additional cilantro.
