  • 8 oz fusilli pasta
  • 4 cups fresh kale, chopped
  • 1 cup cherry tomatoes, halved

  • 1 cup crumbled feta cheese
  • ½ cup Kalamata olives, pitted and sliced
  • ¼ medium red onion, thinly sliced
  • ¼ cup extra virgin olive oil
  • Juice of 1 lemon
  • 1 tsp dried oregano

Instructions

  1. Cook pasta according to package instructions in salted boiling water until al dente. Drain and rinse under cold water.
  2. While pasta cools, massage chopped kale with olive oil in a large bowl until tender.
  3. Mix diced cherry tomatoes, cucumber, and red onion into the bowl with kale.
  4. Add cooled pasta along with crumbled feta and olives; toss gently to combine.
  5. Whisk together olive oil, lemon juice, oregano, salt, and pepper; drizzle over salad before serving.
