Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8 inch baking dish.
  2. In a bowl, mix flour, sugar, and melted butter until crumbly. Press into the bottom of the dish.
  3. Bake the crust for 15 minutes until lightly golden.
  4. Whisk together eggs, sugar, lemon juice, zest, baking powder, and raspberries in another bowl until combined but still chunky.
  5. Pour filling over the baked crust and return to the oven. Bake for another 25-30 minutes until set.
  6. Allow to cool completely before slicing into squares.
