Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup apple cider
  • 2 tbsp fresh rosemary, chopped
  • 4 garlic cloves, minced
  • 2 tbsp olive oil
  • 2 tbsp low-sodium soy sauce
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper (adjust to taste)
  • 1 tsp onion powder

Instructions

  1. In a large bowl, combine apple cider, olive oil, soy sauce, minced garlic, chopped rosemary, salt, pepper, and onion powder. Whisk until well mixed.
  2. Add chicken breasts to the marinade and coat thoroughly. Cover the bowl with plastic wrap and let marinate in the fridge for at least 1 hour; overnight is ideal.
  3. Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  4. Remove chicken from marinade (reserve the marinade) and place in the baking dish. Bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C).
  5. While the chicken bakes, pour reserved marinade into a small saucepan and simmer over medium heat until reduced by half (about 10 minutes).
  6. Once cooked, let the chicken rest for five minutes before drizzling it with the sauce before serving.
