  • 1 cup fresh strawberries, sliced
  • 1 cup small sago pearls
  • 1 can (400ml) full-fat coconut milk
  • 1/2 cup sugar
  • 4 cups filtered water
  • Fresh mint leaves for garnish

Instructions

  1. Rinse sago pearls under cold water until clear. In a pot, bring 4 cups of water to a boil and add the rinsed sago pearls while stirring gently.
  2. Cook on medium heat for about 15 minutes until the pearls are translucent and chewy, stirring occasionally.
  3. Drain cooked sago using a fine mesh strainer and rinse under cold water to stop cooking. Set aside.
  4. In another saucepan over low heat, combine coconut milk and sugar, stirring until the sugar dissolves completely.
  5. Add drained sago pearls to the warm coconut mixture and let it sit on low heat for about 5 minutes.
  6. In serving bowls, layer strawberry slices at the bottom followed by scoops of the sago mixture. Top with additional strawberries and garnish with fresh mint leaves.
