  • 4 salmon fillets (6 oz each)
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil leaves, chopped
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix cherry tomatoes, garlic, basil, and olive oil. Toss to coat.
  3. Place the salmon fillets on the baking sheet skin-side down. Squeeze lemon juice over each fillet and season with salt and pepper.
  4. Spread the tomato mixture around the salmon, placing some on top of the fillets.
  5. Bake for 15-20 minutes until the salmon flakes easily with a fork and tomatoes are blistered.
  6. Let rest for 5 minutes before serving garnished with fresh basil.
