  • 1 cup whole-grain breadcrumbs
  • 1/2 cup dried cranberries
  • 1/2 cup vegetable broth (low-sodium)
  • 1/4 cup pure maple syrup
  • 2 tsp fresh thyme, chopped
  • 2 tsp fresh sage, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a loaf pan with olive oil or line it with parchment paper.
  2. In a skillet over medium heat, sauté the chopped carrots and celery in olive oil until soft (about 5-7 minutes).
  3. In a large mixing bowl, combine the sautéed vegetables with walnuts, almonds, breadcrumbs, cranberries, vegetable broth, maple syrup, thyme, sage, salt, and pepper. Mix well until combined.
  4. Transfer the mixture into the greased loaf pan and press down firmly to shape.
  5. Bake for 45-50 minutes until golden brown on top. It should feel firm yet slightly springy when pressed.
