  • 4 boneless, skinless chicken breasts (about 600g)
  • 2 large onions, chopped
  • 4 garlic cloves, minced
  • 1-inch piece of fresh ginger, grated
  • 2 tbsp curry powder
  • 1 can (400ml) full-fat coconut milk
  • 2 tbsp tomato paste
  • 1 tbsp brown sugar
  • Fresh coriander (cilantro) for garnish
  • Salt & pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. Prep your ingredients by chopping the chicken, onions, garlic, and ginger into bite-sized pieces.
  2. Heat oil in a large pot over medium heat and sauté onions until golden brown (5-7 minutes).
  3. Add garlic and ginger; sauté until fragrant (1-2 minutes).
  4. Stir in curry powder, salt, and pepper; cook for about 1 minute.
  5. Mix in chicken pieces and cook until they turn white (approximately 5 minutes).
  6. Pour in coconut milk and tomato paste; stir until blended and bring to a gentle simmer.
  7. Simmer for 25-30 minutes until the chicken is tender and flavors meld beautifully.
  8. Serve hot over steamed rice or warm naan bread.
