  • 2 lbs beef chuck roast, cut into 1-inch pieces
  • 4 strips bacon lardons
  • 2 cups dry red wine (like Pinot Noir)
  • 3 medium carrots, chopped
  • 1 cup pearl onions
  • 8 oz cremini mushrooms, halved
  • 4 garlic cloves, minced
  • 3 cups low-sodium beef broth
  • 2 tbsp flour
  • 2 tsp olive oil
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 325°F (160°C). In a Dutch oven, cook bacon over medium heat until crispy. Remove the bacon and set aside, leaving the fat in the pot.
  2. Dust beef chunks with flour, then sear in the bacon fat until browned on all sides (about 3-4 minutes per side). Remove and set aside.
  3. Sauté chopped carrots and pearl onions in the same pot until softened (about 5 minutes). Add minced garlic and cook for an additional minute.
  4. Pour in red wine, scraping up browned bits from the bottom of the pot. Return beef and bacon to the pot.
  5. Add beef broth until everything is submerged, then add thyme and bay leaves. Bring to a simmer.
  6. Cover tightly and transfer to the oven; cook for about 2 hours or until the beef is tender.
  7. Stir in mushrooms during the last 30 minutes of cooking. Serve hot with crusty bread or mashed potatoes.
