  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain rice (uncooked)
  • 1 cup tzatziki sauce
  • 1 cucumber (diced)
  • 2 tbsp fresh dill (chopped)
  • 2 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a large baking dish with nonstick spray.
  3. Spread uncooked rice evenly across the bottom of the dish.
  4. Place chicken breasts on top of the rice and generously pour tzatziki sauce over them.
  5. Pour chicken broth around the edges until rice is just submerged.
  6. Add diced cucumber and fresh dill on top; gently toss everything together.
  7. Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes until chicken is cooked through.
