  • 8 oz fresh chorizo, crumbled
  • 2 medium Yukon Gold potatoes (about 12 oz), peeled and diced
  • 4 large eggs
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • ½ cup salsa

Instructions

  1. Boil diced Yukon Gold potatoes in salted water for 10-15 minutes until fork-tender; drain and set aside.
  2. In a skillet, heat olive oil over medium heat and cook crumbled chorizo for 5-7 minutes until browned.
  3. Stir in boiled potatoes; lower heat, crack in eggs, and stir gently until eggs are cooked through.
  4. Warm tortillas in another pan for about 30 seconds on each side.
  5. Spoon filling onto each tortilla, top with cheese and salsa, then roll tightly.
  6. Serve hot with extra salsa on the side.
