  • 8 corn tortillas
  • 1 can (15 oz) black beans, rinsed and drained

  • 2 cups enchilada sauce

  • 3 cloves garlic, minced
  • 2 tsp cumin
  • 2 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C) and grease a large baking dish.
  2. Sauté diced onion in a skillet over medium heat for 3-4 minutes until translucent. Add minced garlic and cook for an additional minute.
  3. Brown the ground beef in the skillet for 5-7 minutes; drain excess fat.
  4. Stir in black beans, cumin, chili powder, salt, and pepper; cook for 2-3 minutes until heated through.
  5. Fill each tortilla with 2-3 tablespoons of the beef mixture and roll tightly. Place seam-side down in the baking dish.
  6. Pour enchilada sauce over the top and sprinkle with shredded cheese.
  7. Bake for 20-25 minutes until cheese is bubbly and golden brown.
