  • 4 medium zucchinis
  • 3 boneless skinless chicken breasts (about 1 lb)
  • 1/2 cup sun-dried tomatoes (oil-packed)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh basil leaves
  • 3 garlic cloves (minced)
  • 2 tsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Halve zucchinis lengthwise and scoop out the insides, leaving enough flesh to hold their shape.
  3. In a skillet, heat olive oil over medium heat and cook diced chicken until browned and no longer pink (6-8 minutes).
