  • 2 medium sweet potatoes, peeled and cubed
  • 1 cup bell peppers (red or yellow), diced

  • 2 tsp cumin
  • 2 tsp chili powder
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Toss sweet potato cubes in olive oil, salt, and pepper; spread on a baking sheet. Roast for 25–30 minutes until golden brown.
  2. In a skillet over medium heat, add olive oil. Sauté onions and bell peppers for about 5–7 minutes until softened.
  3. Add minced garlic; cook for an additional 30 seconds until fragrant.
  4. Stir in ground beef along with cumin and chili powder; cook until browned, breaking it apart as it cooks.
  5. Fold in roasted sweet potatoes and mix well. Top with fresh cilantro before serving.
