  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 tsp turmeric
  • 1 tsp cumin seeds
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Prep the ingredients by chopping the onion and mincing the garlic.
  2. In a large pot over medium heat, add olive oil and sauté the onions until translucent (about 5 minutes). Add garlic and cook until lightly golden.
  3. Stir in rice, turmeric, cumin seeds, salt, and pepper; sauté until rice turns slightly opaque.
  4. Pour in chicken broth while stirring gently. Bring to a boil, then reduce heat to low.
  5. Cover the pot and simmer for 15-20 minutes until the rice absorbs all liquid; do not lift the lid during cooking.
  6. Remove from heat and let sit covered for an additional 5 minutes. Fluff with a fork and garnish with parsley.
