  • 1/4 cup sugar (for compote)
  • 1 tsp vanilla extract

Instructions

  1. In a large bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  2. In another bowl, mix eggs, milk, melted butter, and brown sugar until smooth. Combine wet and dry ingredients gently.
  3. Preheat a non-stick skillet over medium heat. Pour about 1/4 cup of batter onto the skillet and cook until bubbles form on top (2-3 minutes). Flip and cook until golden brown (another 2-3 minutes).
  4. For the compote, melt butter in a saucepan over medium heat. Add sliced apples and sugar; cook until tender and caramelized (5-7 minutes). Stir in vanilla extract at the end.
  5. Serve pancakes stacked high with warm caramel apple compote on top.
