  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium chicken broth
  • 2 tsp Italian seasoning
  • Salt & pepper to taste
  • 2 cups kale or spinach (optional)

Instructions

  1. In a large pot over medium heat, add a splash of olive oil. Sauté the diced onion and minced garlic for about 3-4 minutes until fragrant and translucent.
  2. Crumble in the ground turkey and cook for 5-7 minutes until browned.
  3. Add the diced carrots and celery; stir and cook for another 5 minutes.
  4. Pour in the chicken broth and canned tomatoes (juice included), then add the Italian seasoning. Bring to a boil before reducing heat to simmer.
  5. Let simmer gently for about 20 minutes, stirring occasionally.
  6. If using, add kale or spinach during the last 5 minutes of cooking.
