  • 2 cups vegetable broth (low-sodium)
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 carrot, diced
  • 2 stalks celery, diced
  • 1 tsp fresh thyme, chopped
  • 1 tsp fresh rosemary, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions until translucent (about 5 minutes), then add garlic and sauté until fragrant.
  2. Stir in the carrots and celery; cook until softened (5-7 minutes).
  3. Add the vegetable broth and white beans; bring to a gentle boil. Reduce heat and simmer for 20 minutes.
  4. In the last 5 minutes of cooking, stir in thyme and rosemary.
