Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat and transfer to a slow cooker.
  2. Sauté onions and garlic in the skillet until translucent (about 3-4 minutes), then add to the slow cooker.
  3. Add diced bell peppers, black beans, corn, tomato sauce, taco seasoning, and rice to the slow cooker; mix well.
  4. Pour chicken broth over the mixture until submerged. Cook on low for 6-8 hours or high for 3-4 hours.
