  • 1 medium onion, chopped
  • 1 cup bell peppers, diced (any color)
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups frozen mixed vegetables
  • 1.5 cups shredded cheddar cheese
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a large baking dish.
  2. In a skillet over medium heat, sauté chopped onions for 3-5 minutes until translucent. Add diced bell peppers and cook for another minute.
  3. Add lean ground beef to the skillet and cook until browned (5-7 minutes). Drain any excess fat.
  4. Stir in canned tomatoes, salt, pepper, garlic powder, and Italian seasoning. Simmer for 3 minutes.
  5. Mix in frozen mixed vegetables and heat through for another 3-4 minutes.
  6. Layer half of the meat mixture in the greased baking dish, sprinkle with half the cheese, then add the remaining meat mixture followed by the rest of the cheese.
  7. Bake for 25-30 minutes or until bubbly and golden brown.
