  • 1 (14.5 oz) can diced tomatoes with juice

Instructions

  1. Heat 1 tbsp oil in a large pot over medium heat. Sauté chopped onion and diced bell peppers until softened (about 5 minutes).
  2. Add minced garlic, cumin, and chili powder; cook for an additional minute until fragrant.
  3. Stir in chicken breasts and rinsed black beans until well mixed.
  4. Pour in canned tomatoes and chicken broth; bring to a gentle boil.
  5. Lower heat to simmer, cover the pot, and cook for 20-25 minutes until the chicken shreds easily.
