  • 2 large fresh lemons (zest and juice)
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 2 large eggs, room temperature

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and ¼ cup sugar until combined. Press into an 8×8-inch baking dish lined with parchment paper.

  3. In a separate bowl, beat the softened cream cheese until smooth. Add remaining sugar, sour cream, lemon juice, and zest; mix until creamy.
  4. Add eggs one at a time, beating gently just until combined. Pour filling over cooled crust.
