  • 1 cup canned pumpkin puree
  • 3/4 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1/4 cup melted unsalted butter
  • 8 oz cream cheese (softened)
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease a jelly roll pan.
  2. In one bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt. In another bowl, blend sugar and melted butter; add eggs and pumpkin puree.
  3. Fold dry ingredients into wet until just combined. Spread batter evenly in the pan.
  4. Bake for 15-20 minutes until a toothpick comes out clean. Cool for five minutes before rolling in a powdered sugar-dusted towel.
  5. Beat cream cheese with powdered sugar and vanilla until smooth; spread on unrolled cake before re-rolling.
