  • 2 lbs Yukon Gold potatoes
  • 1 cup shredded sharp cheddar cheese

  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dice the Yukon Gold potatoes into bite-sized pieces. In a bowl, toss with olive oil, salt, pepper, and smoked paprika.
  3. Pat the chicken breasts dry and season both sides with salt, pepper, garlic powder, and smoked paprika.
  4. In a large baking dish, layer the seasoned chicken breasts followed by the seasoned potatoes.
  5. Top with shredded cheddar cheese and cover with foil.
  6. Bake for approximately 25 minutes; remove foil to let the cheese bubble and brown for an additional 10 minutes.
