  • 1 cup granulated sugar
  • 1 tsp white vinegar
  • 1 tsp cornstarch
  • 1 cup heavy cream (cold)

Instructions

  1. Preheat oven to 225°F (110°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, whip egg whites on medium speed until soft peaks form (about 4-5 minutes).
  3. Gradually add sugar while beating on high speed until stiff peaks form and mixture is glossy.
  4. Gently fold in vinegar and cornstarch.
  5. Spoon meringue onto prepared baking sheets to create nests, making a well in the center.
  6. Bake for 1 hour 15 minutes until crisp outside and soft inside; leave in the oven to cool completely.
  7. Whip heavy cream to soft peaks; fill cooled nests with cream and top with fresh berries.
