  • 2 cups fresh or frozen sweet corn
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 2 medium Russet potatoes, cubed
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp unsalted butter

Instructions

  1. In a large pot over medium heat, melt butter until bubbly. Add onions and garlic; sauté until fragrant and translucent.
