  • 4 cups warm chicken broth
  • ½ cup grated Parmesan cheese
  • 2 tbsp butter (plus 1 for finishing)
  • 2 tbsp fresh parsley, chopped

Instructions

  1. In a large skillet over medium heat, melt 2 tablespoons of butter. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook until fragrant.
  2. Add the Arborio rice to the skillet and toast for about 2 minutes.
  3. Pour in the white wine and saffron dissolved in warm water; stir continuously until most liquid absorbs.
  4. Gradually add warm chicken broth one ladle at a time, stirring constantly. Wait for each addition to absorb before adding more—this should take about 20 minutes.
  5. When the rice is nearly al dente, stir in the shrimp and cook until they turn pink, approximately 3-4 minutes. Mix in Parmesan cheese until creamy.
  6. Remove from heat, stir in an additional tablespoon of butter and chopped parsley. Let sit a few minutes before serving.
