  • Salt and pepper, to taste
  • 2 tbsp olive oil or butter

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic; sauté until soft and fragrant (about 5 minutes).
  2. Stir in sliced cremini mushrooms and dried thyme; cook until mushrooms are tender and golden (about 7 minutes).
  3. Add rinsed wild rice and vegetable broth; bring to a boil. Reduce heat to low, cover, and simmer until rice is tender (about 45 minutes).
  4. Stir in heavy cream; season with salt and pepper to taste. Simmer for an additional 5 minutes.
  5. Serve warm in bowls, garnished with fresh herbs if desired.
