  • 24 ladyfinger cookies
  • 1 cup mascarpone cheese (250g)
  • 1 cup unsweetened cocoa powder (100g)
  • 1 cup strong brewed coffee (240ml)
  • ½ cup granulated sugar (100g)
  • 3 large eggs, room temperature
  • 4 oz dark chocolate, melted (113g)
  • 1 tsp vanilla extract

Instructions

  1. Brew strong coffee and let it cool.
  2. In a bowl, whisk egg yolks and sugar until light and fluffy.
  3. Gently fold in mascarpone until fully incorporated.
  4. In another bowl, beat egg whites until stiff peaks form; then fold into the mascarpone mixture.
  5. Dip ladyfingers in cooled coffee and layer them in a dish.
  6. Spread half of the mascarpone filling over the ladyfingers, repeat layers.
  7. Sift cocoa powder on top and refrigerate for at least 4 hours or overnight to set.
